It’s always a bit dangerous when I start playing around in the kitchen. I don’t particularly like to cook. Well, I’m not sure if that’s entirely true. It’s not so much the cooking…it’s the preparation and the clean-up that I really could do without. And if I’m being really honest, it was one of the things I really did not like when I was doing figure competitions. Spending hours on Sundays grilling a bunch of chicken and fish, cooking veggies, etc….ugh. As Sweet Brown would say, “ain’t nobody got time for that!”
So, given my propensity to avoid cooking as much as possible (thank you Isagenix for assisting with this!), when I DO get an itch to cook, it can go really well…or, it can go really, really badly.
Luckily today was a good day! I have been pan-searing my chicken in a bit of coconut oil lately, which is awesome, but was looking for something a little different today. Something nutty and crunchy. Something resembling chicken fingers without the toxic load of the typical fried goodness. So I bought some raw almonds and some unsweetened coconut flakes and put each in the good old Vitamix (separately), in effect creating my own homemade almond and coconut meal. All hail the Vitamix!
Here’s the rest of the story/recipe:
INGREDIENTS:
2 16 oz pkgs chicken breast tenders, preferably organic
1/2 cup egg whites
1/4 cup each of almond and coconut meal
Seasonings to taste (I used sea salt, pepper, garlic and chili powder)
Preheat oven to 375. Combine almond meal, coconut meal and spices in one bowl. Add egg whites to another. Dip chicken tenders first in egg whites, then in meal mixture. Place on a baking sheet lined with parchment paper. Cook for 15 minutes on each side then turn on broiler to get them nice and crispy – watch closely – I broiled for about 2 minutes each side.
Et Voila. Paleo and fat loss friendly, and most of all…TASTY.
