What’s for dinner? This little recipe is, that’s what! Super easy, and make-ahead. Enjoy!
Ingredients:
6 chicken breasts
2-3 tbs coconut oil
Juice from 3 lemons
8 cloves garlic, minced
Fresh basil, chopped (I used whole package)
3 tbs Gourmet Garden Chili Pepper (see pic) or regular red pepper flakes
Instructions:
Combine coconut oil, lemon juice, garlic, basil and chili pepper in a Ziploc bag. Add chicken and toss to coat. Marinade at least 2 hours (I did mine overnight).
Spray a broiler pan with non-stick cooking spray, and arrange chicken in an even layer. Pour marinade over chicken. Broil on high 15 to 20 minutes (depending on thickness of chicken), turning every few minutes or so. Let cool and enjoy!
